Berry Vanilla Healthy Muffins with an oozy centre of berry jam, these gluten free muffins are moist and taste good. You can eat these for breakfast and they are good for lunchboxes for school and work, eat for morning or afternoon tea or take on a picinic, you get the picture.
Muffins have been a staple in our house forever, my favourite and the girls were my chocolate chip ones, not the healthy type. I do have a healthier version now for them and the girls eat them.
I use the same muffin recipe for all my muffins, I got a basic muffin recipe from my cousins wife about 25 years ago (that’s showing my age). This is the basic recipe:
- 2 cups SR Flour
- 3/4 cup milk
- 1/2 cup oil
- 2 eggs
- 1/2 cup sugar
Mix all ingredients together and bake, that simple!
Obviously I change these ingredients by substituting with organic dairy/ almond/coconut milk, pasture raised eggs, good fats coconut oil or olive oil, gluten free flour either a pre made mix or combine different GF flours and stevia for sweetness. The secret to not having tough muffins is to not over mix them, stir until just combined. If you get peaks in your muffins then it means thet have been over mixed.

There was enough mixture left over to make two recipes, the other recipe is still to come. This jam (jelly) is so easy to make and you can use it for other things like
- on toast
any other ideas? Anyway its nice to have in the middle of these muffins, its always good to have something oozy inside like chocolate lava puddings, chocolate brownies. I know I’m going off on a chocolate tangent because who doesn’t love chocolate! I only eat 85% dark chocolate or I make my own raw chocolate, ok back on track now.
The great thing about muffins is that they are so versatile and you can make them sweet or savoury, they are really easy to whip up a batch and even better when you double or triple the recipe and keep a freezer stash, so you’re sorted for lunches for a week or so.

Here is the Berry Vanilla Healthy Muffin Recipe
- 1 cup Gluten Free Flour
- ¾ cup quinoa flour
- 2 TBS vanilla protien powder
- 3 eggs
- ¾ cup melted coconut oil
- 1 cup milk of choice (I used organic dairy)
- ⅓ cup stevia
- 1 tsp cinnamon
- 2 TBS berry jam (see chocolate peanutbutter jelly cups recipe)
- Preheat oven to 180c
- In a large bowl or food processor mix all ingredients together except jam
- Line a muffin tray with paper muffin cases
- Fill cases half full with muffin mixture
- Spoon a dollop of jam in centre of muffins
- Cover jam with remaining muffin mixture
- Cook for 20 minutes
- Cool on a wire rack
