If you are looking for an alternative to dairy whipped cream you can use this whipped coconut cream recipe. Its easy to do and tastes good. You can use it as normal cream from topping scones to adding to all kinds of desserts! Thermomix instructions included also.
I first found about how to whip coconut cream from Sarah Wilsons I Quit Sugar For Life book. I have two of her books in print:

I also have 4 of her ebooks as well. I really like her approach to eating wholefood, the I Quit Sugar book helped me get off sugar for sure. I like that she isnt into a specific diet type as I believe everyone is unique and your body is constantly changing so requires different foods at different times. Getting off processed foods is definatly the way to go and getting back to basics and eating real food is the starting point for good health.
I don’t think there is anything wrong with eating dairy as long as it is in its complete natural form and is organic and cattle has been grass fed. As soon as you start messing with nature you’re bound to run into repercussions.
Some people cant tolerate dairy but you will usually find its the common homenigsed/pastureised type that effects them so having a different option such as coconut cream is a good thing!
I have adapted the original recipe from Sarahs book, with the original recipe I find it quite sweet so to get more of a dairy cream taste I add some lemon juice and salt to it.
I like having it with my Chocolate Pudding (I’ve kept it sweeter for this recipe). Its also good with my Berry crumble which is my next post.
Put or keep a can of coconut cream in the fridge for whenever you need to whip some up. If you turn can upside down it makes it easier to scoop it out.

- 1 can full fat coconut cream
- 1tsp natvia icing sugar
- 1tsp lemon juice
- Pinch of sea salt
- Put can in fridge upside down night before making
- Scoop hard cream out of can and put in a food processor (remember to scrape down sides) or use hand beaters
- Add rest of ingredients and mix until light and creamy.
- Scoop hard cream out of can and put in thermomix
- Add rest of ingredients and mix on speed 4 for 2 minutes stopping and scraping down sides a couple of times .
- Store in the fridge for a few days.
